Anchovies are tiny, silvery fish that come from the Mediterranean and southern European coasts. They're sold saltcured, usually oilpacked, and filleted. Commonly they come either flat or rolled in cans or jars, or ground and mixed with oil or butter to make a paste that is sold in tubes. On their own, anchovies are very salty but mixed into sauces, dressings, or pastas they add a wonderful depth of flavor. To reduce the saltiness, soak anchovies in water for 30 minutes, then drain and pat dry with paper towels. Anchovies disintegrate easily, which is great for sauces, dressings, and cooked dishes. Just whirl them in a food processor with other ingredients or finely chop them to maintain their texture. When cooking with anchovies, tread lightly: Each piece is packed with flavor so a little goes a long way. They can stay in the refrigerator for at least two months.
