There's so much like crayfish, egusi, ogbono, efo, plantain, yam, oha, afang, zobo, rodo, tatase, ofada, garri, elubo, ugwu. Efo is a Yoruba name for vegetables (Spinach, water lettuce and others) used to prepare green healthy soups that arouse nostalgic memories. The original efo soup is a Yorùbá dish prepared with vegetables and stockfish, palm oil, crayfish, pepper, locust bean and may also include meat and other ingredients. The memories the efo leaves evoke are ancient and deep, as they remind the people of the elders' traditions from centuries past. Their drums and music, their rhythms and proverbs. The orikis (ancestral poems) and exploits. It is this mix of identity, heritage and tradition that the efo soups evoke in the consciousness of the people, and those who share in their culinary culture. The efo leaves are packed full of vitamins and minerals. Grown fresh and plucked while still succulent and green, the leaves can be used in salads, coleslaw, ogbono, or Egusi soups. The efo leaves can also be blended into a vegetable juice or used as an accessory in fried and jollof rice dishes.
