To make you need one box of this cake mix, 1 cup sifted cake flour, 1 cup white sugar, 3/4 tsp. salt, 1 tsp. baking powder (use 2 tsp. baking powder and 1/4 baking soda if your cake mix has been on the shelf too long), 1 cup milk, 1/4 cup heavy cream, 1 cup sour cream, 2 tbsp. oil, 1 tsp. vanilla and 2 tsp. almond extracts, and 4 thoroughly beaten egg whites. TIPS: Heat oven to 325 F before you start. You want to bake the batter right away. Get all your WET ingredients ready. You won't have time to measure the sour cream etc, or separate your eggs once you start mixing wet to dry. First: Beat your egg whites and mix all the wet ingredients together. Add the sugar and mix well. You want to give the sugar time to dissolve a bit. Next: Put all remaining dry ingredients into a large mixing bowl and mix well. Give the wet ingredients a final good stir, and add them to the dry. Mix JUST until moist and blended all the way through. Don't worry about lumps smaller than peas DON'T overmix. Fill your cupcake liners and bake. Should take anywhere from 13 to 20 min. Use your judgment and don't overbake. I gently press the top of a cupcake. If it doesn't stay caved in, it is done. Remember: they will continue to cook a bit when you bring them out of the oven. Wait until they are cool before you taste. Buy Betty Crocker Super Moist White Cake Mix 461 g on groceries.ng.
